Il nostro caro Minestrone

Minestrone 1


Dear Foodies! Today has arrived the time for a great Italian classic: the minestrone. The recipe has been sent by our dear Mafi. Good and ideal for every moment and seasons, especially in winter and seasonal changes. Full of vitamins, light and very tasty. Ready? Here’s to you Mafi’s Minestrone  😉



– 2 potatoes

– 2 zucchini

– 2 tomatoes

– 2 stalks of celery

– 2 medium carrots

– ¼ cabbage

-1/2 onion

– ½ fennel

– Some chard leaves

-2 Tablespoons of extra virgin olive oil

– Salt and pepper

– 1 liter of water

– Parmigiano or pecorino cheese


As you can see the ingredients are many but it is all very easy to do. Cut all the vegetables into small pieces. Careful with celery!  remove its threads to not bother while eating the minestrone.

Take a pot and put it on fire. Add two tablespoons of extra virgin olive oil and heat. Cook the onion, celery and carrot slowly. Add the tomato. Let cook for a while. Low heat. Add the potatoes, zucchini, fennel, cabbage and chard (if you find the red chard type even better!). Add salt and pepper.

Let cook for a few minutes. Later add one liter of water and let boil over medium heat for about an hour. It should enough time.

Turn off the heat and let it rest for a while.

Serve hot with a nice sprinkling of pecorino or Parmigiano cheese. As much as you want!

Mafi  recommend us to use half red pepper in the summer time to make it more fresh and colorful. As a finishing touch some basil leaves to give that freshness that needs a summer soup.

If you love hot food you can also add some chily pepper o peperoncino 😉

You can also preserve in the fridge for a couple of days.
