Red Peppers Stuffed with Mediterrean Love



Hi Foodies! Here we are again. We follow the trail of the new Valentine’s Day which will arrive in a few days . Red !!!! The color of passion and love. So today we present you some nice red peppers stuffed with Mediterranean love. Feta cheese, Greek olives, oregano , olive oil , cumin … all ingredients that evoke the Mediterranean culture. So here’s to you these juicy and tasty peppers. Bon Apetit !




-4 Red peppers

– 14.1 ounces (400 Gr) of minced beef ( but if you want even mixed with pork)

-1 onion

-1 tomato

– 5.3 ounces (150 Gr) of Feta Cheese

-1 Tablespoon of oregano

-1 Teaspoon of cumin powder

– 2 ounces (50 Gr) of black olives (if Greek even better)

-2 Tablespoons of bread crumbs

-2 Tablespoons of grated Parmigiano cheese

– Pepper, Salt and Olive Oil


So, when you buy the peppers … take them medium size, wide and low so will be perfect to fill them and serve them as a single portion .


Take the peppers and wash them well. Cut the top (like a little hat to cover the top) and don’t throw it because we need it for decoration. Remove the seeds . Put the peppers in the oven at 360 Fahrenheit (180 degrees) for about 15 minutes. Be careful not to put the tray too high in the oven to keep the peppers safe  from burning . Don’t forget to cook also the “hats” of peppers ! We need them for the final decoration .


In the meantime. Take the onion and cut into very thin pieces. In a medium large skillet put a drop of olive oil and saute the onion. Washed and diced fresh tomatoes and add to pan. If you had purchased the peppers were too big … do as I did. Cut a part and add it to the filling. So if you have bell pepper advanced, now is the time to put it with the tomato and onion. Then add the crumbled feta . Meanwhile the filling is cooking over medium heat , add cumin , oregano , salt and pepper. Finally add the olives cut in half.


While everything is cooking, make some space in the pan. Add the meat and brown near the filling ( half pan for the filling and the other half for the meat). Once the meat has browned , you can mix everything. Let cook for another 5 minutes . Turn off the heat and let cool a little . ‘


At this point you’ve already pre-cooked peppers and even the filling is ready. Stuff the peppers with the filling and sprinkle over the breadcrumbs and grated Parmesan .


To the oven! A 360 Fahrenheit (180 degrees) for 15 minutes . Beware the cooking to avoid burning . You know your oven. So if you think that 360 Fahrenheit (180 degrees) is too much … low a bit the temperature. It is much better to cook the pepper a few minutes more over less temperature than to burn them .


Voila ! Done! You will see … what a fragrance comes out from the oven and the result has beautiful colors.


Serve with “the hats” above… if you want … Or invent a presentation that you like more … May the creativity is with you! 😉


You can accompany with rice or even better … with baked or fried potatoes! Yummy!
