Calypso Pork Loin



Hi Foodies ! How are you? Today is the turn of a really juicy , yummy and nutritious recipe. It has been sent by a new collaborator: Al Maggi . It’s a dear friend and colleague of mine. I have to say that his recipes are fantastic. This pork loin is accompanied by a sauce of Rum and Pineapple. You will really lick your fingers with it!. We hope that he’ll send us some other recipes ! Enjoy it ! 😉




-600 / 700 g pork loin (pork joints)

-1 Pineapple

-8 Tablespoons of Rum

– 2.1 ounces (60 Gr)of sugar cane

-2 Tablespoons of honey

– half a lemon

-2 Cloves of garlic (just 1 if you do not love garlic )

-1 Tablespoon zest of ginger

– Olive Oil

-Salt and Pepper

-1 / 2 liter of milk


Take the pork loin and let it stand about ten minutes with the milk. This is a little trick to make it softer.


In the meantime , take the pineapple and peel it. Cut it into slices. Use ¾ to make a pineapple juice . The other part of the pineapple will be useful later for garnishing.


Take a bowl and put the pineapple juice that you have just made. Add the rum , honey, sugar, salt, pepper, ginger and the juice of half a lemon. Also add two crushed garlic cloves . Let it soak for a while you prepare the pork .


Take a big pan or pot. Add a drop of oil. Let heat the oil and then put the pork . Let it brown on all sides. Once you have finished, add the sauce. Then add half a glass of water so the sauce does not evaporate while cooking.


Let it cook, covered with a lid, for an hour. Slow fire. Every 10 min you should control how is goes and put some sauce over the meat to keep it wet and let it blend with all the ingredients.


If you prefer, once you have browned the meat you can cook the pork in the oven with the sauce. At 150 degrees for about an hour. And dipping the pork occasionally with the sauce.


Done! Easy and incredibly good!


Take the pork and cut into slices. With a good knife! I do not have a decent one now! I have to buy new ones… so forgive me if in the picture you can see an unprofessional cut … Upsi! ha ha ha 😀


Garnish, as Al Maggi says, with baked sweet potatoes or potatoes. Use some pieces of pineapple too. Serve with the sauce over the slices. But! Don’t forget to put a gravy boat with more sauce available in the table for everyone… for a bis… because it creates addition ! it’s sooooo good! 😉
