Christmas Plum Cake

Plum Cake

 

Hi Foodies! Christmas season has arrived and now is the time to celebrate with colleagues , friends and family . So when I went to buy some fruit, I saw some Ribes (red currant) and blueberries and I could not avoid thinking about the Christmas tree balls . Back home, as enchanted by the magic of Christmas , I created this recipe for you, to celebrate all together. Ideal for any time and also to surprise your loved ones. Luscious !

 

Ingredients:

 

-6.4 ounces (180 Gr) of flour “00”

– 1.8 ounces (50 Gr) of butter

-2 eggs

– 1.8 ounces (50 Gr) of chocolate chips

–  5.3 ounces (150 Gr) of brown sugar

– 4 Tablespoons of milk

– 1 Teaspoon of baking powder

– 4.4 ounces (125 Gr) of fresh currants

– 4.4 ounces (125 Gr) of fresh blueberries

–  for the frosting:

-100 Grams of dark chocolate

– 1 ounce (25 Gr) of butter

– 5 tablespoons of fresh cream

– 3 tablespoons of granulated sugar

 

Begin by preheating the oven to 360 Fahrenheit (180 degrees). Take a bowl and mix the flour, sugar and baking powder. Melt the butter in a double boiler and add it to the mix. Turn and later add the milk and eggs. Once you have the mixture ready also add cranberries and currants (do not forget to wash them before). Let some blueberry and a pair of branches of currants to decorate over the cake. Then add the chocolate chips.

 

Put the mixture into a baking dish for plum cake. You can use baking paper or use butter and flour to prevent sticking the cake.

 

To the oven! 360 Fahrenheit (180 degrees). For 25-30 minutes. Check the oven while cooking. As you know every oven is different so be careful at the last minutes of baking .

 

Once done, remove from the oven and let cool .

 

Meanwhile, melt the chocolate in a double boiler with butter and fresh cream. Once all melted,  let cool. Whip the frosting for 5 minutes. Not too much. Just to give texture to the frosting. And now the most fun and delicious part! .

 

Place the plum cake on a beautiful plate. Thrown over the frosting making zigzag movements … for a beautiful decoration. But if you prefer you can cover all the plum cake . Above, add the cranberries, currants and granulated sugar. May the creativity be with you!

 

If you want to serve it perfect: serve it when is still warm and pour the chocolate and decorations some minutes before. The result is spectacular!
