Zucchini Filled With Cuddles



Hi Foodies! Here is another recipe of our Mafi. Yummy and perfect for so many occasions. These zucchini will make you dream and will make you have a very good mood. Serve with some salad, rice or baked potatoes. Perfect to warm you in a Autumn day.  And if you offer them in a dinner at home … your guests will be delighted . They are first-class cuddles! 😉





– 10.5 ounces (300 gr) of ground beef and veal ( if you want even pork )

-3 Medium sized zucchini

– 1.8 ounces (50 gr) of grated Parmigiano

– Fresh herbs : parsley and mint

-4 Slices of sandwich bread soaked in water

– Grated lemon peel

-1 Tablespoon olive oil

– Salt and pepper

-1 Peak of garlic

-1 Glass of white wine


Take the zucchini. Wash them well and empty them still leaving a border of about 8 mm to hold the stuffing inside. Cut them in half to get 6 ” tubes “. Add some salt inside and let them drain for about half an hour so will lose a bit of their liquid …so that they will be softer .


Then keep preparing the filling. Mix the meat with lemon zest , bread soaked ( left to soak in water and then wrung out ), the grated Parmesan , fresh herbs , a tablespoon of olive oil, salt and pepper.


Fill the zucchini with the filling. If you do have leftover filling you can take advantage of to make meatballs that can accompany the zucchini.


Put the zucchini in a baking oven with a drop of olive oil, a clove of garlic, a glass of wine and a bit of water. To the oven! 360 Fahrenheit (180 degrees) for about an hour and twenty minutes (if necessary add some water among  cooking). Halfway through cooking, add the meatballs ( if you have made them​) .


If you prefer to make the recipe in the pan … must always cook with olive oil, wine and garlic. Adding water to make them cook better and long , for about 40 minutes over low heat with the pan covered . Halfway through cooking, add the meatballs ( if you have them made ​​) .


Voilà ! Ready ! You just have to put them on a nice plate . Alone, with a nice potato side dish with meatballs … May the creativity be with you! 😉


Are always good. Warm or cold. So you can bring them to friends or even for a picnic in the countryside or in a city garden.
