Exotic Calamari Rings



My Dear Foodies ! Today I have the honor to present a good new . We have a new friend of foodies who writes us nothing less than from Mauritius : The Chef Sandy Daswani . A woman full of resources and surprises, especially in the kitchen. Really Foodie and experienced (over 17 years) in the world of cooking and as Chef plays with all types of cuisine: French, English, Creole, Indian , Malay and Chinese. An Authentic International Foodie ! She is also author of the book “A Chef à la maison” where she tells the secrets of Mauritian cuisine . What can I tell ? ! I cannot wait to find out with you all the recipes she’ll want to share with all of us. Here’s the first recipe: fried calamari … but with an exotic touch: done by and exotic Chef and cooked with exotic spices 😉

-1 Kg of calamari rings

-2 eggs

-2 Cups of breadcrumbs

-1 Teaspoon of salt

-1 / 2 teaspoon cayenne pepper

-1 / 2 teaspoon of caraway powder

-1 / 2 teaspoon white pepper

-4 Tablespoons of milk

– Oil for frying


These fantastic calamari rings are easy to make . In no time you can enjoy this appetizer with a light dill sauce or ketchup


Heat oil in a medium-sized pot, oil should be about 4 cm deep.


Combine egg and milk in a bowl, drop in calamari rings, make sure to cover them with the egg..


In another bowl, mix the breadcrumps with salt and spices.


Take the calamari rings, one by one out of the egg, shake off the excess egg and roll in breadcrumps until completely covered.


Deep fry coated rings in hot oil, in batches, for 2 minutes, until golden brown and crisp.


Remove, drain on absorbent paper and serve with dill sauce on the side.


Ah yes! The lovers of fried fish will adoooore this recipe!
