A Divine Risotto



Hello Foodies ! Here we are again. Today a perfect recipe for this crazy weather that arrives with the autumn. A gorgeous risotto with gorgonzola cheese, pears and walnuts. Yummy! It is perfect after a long day of rain or a hard work day . The sweet taste of the pears , the creaminess of the cheese and the crunchy touch of the walnuts matches incredibly. Ah! And don’t forget the toasted bacon ( not for the vegetarian version ) makes it really … Divine !!!!




-7 ounces (250 gr) of rice for risotto ( Carnaroli )

-1 / 2 onion

– Two pears ( medium size )

-3 ounces (80 Gr) of Gorgonzola ( also a mix with mascarpone is perfect)

– 1,5 ounces (40 Gr) of walnuts

– A slice of bacon ( not for vegetarian version )

-A stock cube ( if it is ” organic ” even better)



Begin by making the broth in a pot with a liter of water and the stock cube.


Chop the onion . Wash, peel and cut the pears into small dices.


Take a large skillet and pour a drop of oil. Add the onion and sauté. After a few minutes add the pears. Let cook for about 3 -4 minutes and add the rice. Sauté everything together. After two minutes, add two or three ladles of broth and turn. Let it cook.


As you know, you have to cook the rice with so much patience, stirring and adding broth slowly. So once the broth dries, add some more and turn the rice … and do it several times until the rice is ready (al dente). To get to this point will take about 15-18 minutes.


When the rice begins to be more creamy (about 10 minutes of cooking ) add the gorgonzola. You can also add the walnuts into small pieces. Turn and let cook. Do not forget to always turn the rice. It’s important! To not let it stick to the pan but also to make the rice becomes creamy.


Try it when you see that might be ready : al dente and creamy.


Once that is done, serve it and eat it right away. Risotto is one of those dishes that is “cooked and eaten” ! As they say in Italian: “Cotto e mangiato”!


Do not forget to put in a nice plate with love and some cute decoration . May the creativity be with you 😉


I added, as you see in the picture, some bacon ( vegetarians do not add this ingredient , of course) into small pieces and browned in a frying pan. Without oil or anything else. There’s no need. Just do it over low heat and toast with its ​​fat. Becomes crispy and becomes perfect to accompany this rice. Just some! to give that final touch to crown the rice.
