Choc and Fresh Peppermint Parfait



Hello Foodies! Here we are again. The other night I invited friends for dinner and I wanted to do something new. So I cooked Argentine Empanadas (see recipe on the blog) and as a novelty I made a nice parfait with chocolate and fresh mint. I must say that I was not sure how it would come but in the end the dessert came really good! Fresh, sweet but not too much and really tasty! Enjoy it because it is very easy to do and it’s amazingly good 😉




– 3.5 ounces (100 Gr) of dark chocolate 70%

– 10.5 ounces (300 Gr) of cream

-3 Tablespoons of sugar

-4 Sprigs of fresh peppermint

– 0.7 ounces (20 Gr) of chocolate chips


Let’s begin! Take 150 grams (half of it) of cream and boil it with three sprigs of peppermint (about 6 or 7 leaves each). Once the cream begins to boil turn off the heat and leave to marry again about five minutes. Later add the chocolate into small pieces and melt everything together. Leave to set.


Meanwhile mounted the other part of the cream (150 g) with the sugar.


Then cut in very small pieces the peppermint sprig that remained.


Take the pot with the chocolate cream. Remove the sprigs of mint. Pour the cream into the whipped cream bowl and add the chopped fresh mint and chocolate chips. Mix everything with care. You’ll see the crispy effect of the chocolate chips and chopped mint inside it.


Voilà! Put into molds. Use one large mold to make a big parfait or various smaller molds for small portions.


Refrigerate for at least 3 hours if the molds are small and at least 4 hours if the mold is big.


Once the parfait is ready you can remove it from the mold at least 15 minutes before eating. Serve on a nice dish or pan. And decorate it well!!!!  With what you prefer: an “After Eight” close, chocolate chips, fresh peppermint leaves…etc.
