Feta Surprise



Dear foodies, today I present to you our first guest. He is a dear friend of mine and a very good cook. He loves to play with the smells, flavors and colors of the ingredients in a really courageous way.  He is very creative and he cooks with so much passion. I hope you’ll enjoy this recipe. It’s very interesting and tasty. Ideal to surprise your guests. There you go:


–  7 ounces (200 gr) of Feta cheese

– 1.5 ounces (100 gr) of bacon slices (not too fat, if possible)

– 4 tablespoons of honey

– A bit of black pepper

– A bit of dried rosemary

– 2 tablespoons of cranberry sauce (*)

– 2 tablespoons of mild mustard


Take the feta and cut it into four pieces: long and rectangular (1.75 ounces, more or less). Take the slices of bacon and do with them four bases to support each piece of feta. Put the feta pieces over the bacon bases. Then add some pepper, dried rosemary and a big spoon of honey on the top of each feta piece and close it enveloping all with the bacon. The result is a roulade with bacon inside the feta, honey, pepper and rosemary. No salt. The feta is already very tasty by itself.

Now put the rolls on a pan and brown over low heat. Don’t use oil because the fat of the bacon is enough. Observe how the honey that comes out from the rolls will give a delicious touch of caramel. Cook it for 5 minutes.

Then put the rolls in the oven in a roasting pan and let them cook at 300 Fahrenheit  for 10 minutes. You will see that the feta begins to melt and blend with the flavors of the different ingredients.

Once it’s all cooked, is done!

But! The final surprise is the sauce with which you can accompany the rolls.

For the sauce, put in a pan 2 tablespoons of mustard, 2 of cranberry sauce and 2 tablespoons of water. Let cook on low heat for 5 minutes. You will see how the scent of it is really good and it is great on the top of our rolls. If there is anyone who does not like cranberries or mustard … serve without sauce.

* For the cranberry sauce. To be honest I have not found at this time fresh or frozen cranberries, so I used a cranberry biological sauce that I have bought in a specialized shop. Then I will see it if I can find for you a nice recipe to make a fresh sauce.

The roll itself is already tasty and ready to eat. But with the sauce becomes really unique, interesting, with character! and gains much more presence on the plate. Enjoy it! It is one of my favorite dishes 😉
